Gin Garden

Bank holiday Mondays call for something special to celebrate the sunshine we've had, or more likely, cheer us up from all the rain! Since it didn't rain on the actual bank holiday day, we decided to celebrate with a lovely Gin Garden cocktail.

I saw this recipe on Something for the Weekend made by Wayne Collins (follow him on Twitter: @mixxit_wayne). We've made it a few times and it is delicious!
Here's how.

You'll need:
- 1 tbsp chopped cucumber, plus extra to garnish
- 1 tbsp elderflower cordial
- 35ml/1¼fl oz London gin
- 25ml/1fl oz pressed apple juice

To make:
Place the cucumber and elderflower cordial into a cocktail shaker and crush with the end of a rolling pin.
Add the gin, apple juice and a handful of ice and shake hard.
Pour the cocktail into a martini glass and garnish with a slice of cucumber.

The celebration of summer, however nice (or not!) it's been!
