It so grey and miserable at the end of August when I wrote my meal plan for the week. Then the first day of September decided to be bright, warm and sunny! Well, I didn't fancy minced beef cobbler or sausage casserole so pasta it was. And in 30 minutes from start to finish.
This dish turned out more delicious than I had anticipated, and it smelt really good cooking too.
Ingredients (for 2 + one toddler)
- Pasta (as much as you fancy)
- 3 medium tomatoes (I used on the vine as they smell and taste so much nicer)
- 1 clove of garlic
- 2tbsp extra virgin olive oil
- rocket (about 2 handfuls)
- chorizo (optional extra)
- cheese to serve (I used cheddar as I always have some in the fridge)
Boil water and cook pasta. While the pasta is cooking, finely chop or crush the garlic and gently fry in the oil (I don't normally use extra virgin for frying, but trust me when I say you notice the difference in the recipe!). Chop and add the tomatoes then gently fry until warmed through and combined (about 5 minutes).
Once the pasta is cooked, drain and add the garlicky tomatoes, taking care not to lose any of the cooking juice. Add the rocket and stir. Serve in bowls with grated cheese.
We added chorizo to serve as it's a bit spicy for our toddler. You could easily add it in when frying the tomatoes for extra flavour.
