Homemade Chicken Pie for two: a brilliant, filling comfort dinner for a cold autumnal evening! (with thanks to BBC food.)
Last Monday was cold, windy and a little bit damp, and because of the weather I wanted my dinner to be something comforting and relatively filling. On perusing my fridge I found that I had some leftover cooked chicken thighs, puff pastry and double cream, as I don’t like to waste food and had never made chicken pie before I checked the BBC for a basic chicken pie recipe which I adapted to suit the leftovers in my fridge.
2 cooked chicken thighs,
1 knor or any other pre-made stock cube
3 tbsp Double Cream
A squeeze of Lemon
2 pre-made puff pastry sheets
2 sticks Celery
1 red Onion
1 beaten egg to glaze pastry
I used enough of my store cupboard ingredients to make pies for two people, so I halved the amount recommended in the original recipe. It was very easy to make, I assembled the pie in about 10 minutes and cooked it in 30 minutes before serving with a mustard mash. Highly recommended recipe, two big thumbs up!
